BURRITO BOWL

If you love Mexican food, you won't be disappointed by this recipe. It's full of flavour, very filling & satisfying, and will not leave you feeling heavy or bloated afterwards!

INGREDIENTS (1 serving)
1 large tomato
1/2 onion
1/2 - 1 avocado (depending on size)
1 bunch cilantro (approx 1 cup tightly packed)
1 cup cauliflower rice (buy already made or make your own by pulsing cauliflower in a food processor)
1/2 can rinsed black beans
2-3 garlic cloves (depending on how much of a garlic lover you are)
1 lemon
1/2 - 1 tbsp chipotle spice (depending on how spicy you want your "rice")
1 tsp cumin
1/2 tsp cayenne
2 tsp garlic powder
2 tsp onion powder
sea salt & pepper to taste (it's also very good salt free!)
INSTRUCTIONS
-make the guacamole by mashing the avocado with 2-3 garlic cloves (minced), the juice of 1/2 lemon, 1/4-1/2 cup chopped cilantro (depending on how much you love cilantro), salt and pepper to taste
-make the salsa by combining chopped tomato, onion, juice of 1/2 lemon, 1/4-1/2 cup cilantro, salt and pepper to taste
-cook the cauliflower rice in a pan together with chipotle spice, 1 tsp onion powder, 1 tsp garlic powder. Add a little bit of water if sticking.
-cook the beans in a pan together with 1 tsp onion powder, 1 tsp garlic powder, cumin and cayenne. Add water if sticking.
-Serve over a bed of romaine or spinach, done!
